Mediterranean Treat

I was absolutely starved this afternoon. I had been waiting for two hours at the food bank, and was sorting through the bags of vegetables when an idea hit me. I recalled the Mediterranean treat I had been given at the home of an Israeli woman several years ago. I hadn’t had that treat in quite some time; in fact, I think I had only fixed it once since she had introduced me to it.

I remembered that I had a small container of tuna I had prepared in the refrigerator, which would be a perfect accompaniment. I began to gather the supplies. Then I spotted two avocados on the counter that were overripe. Perfect!

First, my tuna mix is really simple. I’ve tried it with mashed up boiled eggs, but basically, I like diced onions, preferably sweet onions, and Hellman’s mayonnaise in it. That’s it. However, you have to use enough diced onions in order to get the flavor of that throughout the tuna mix.


Puttin' It Together

Secondly I sliced a tomato onto a plate. I poured a bit of olive oil onto the tomatoes, and then sprinkled them with a bit of salt. Then I threw some Black olives on the plate and found some artichoke hearts in the refrigerator. It just keeps gettin’ better.

I put the avocado on the plate, and sprinkled a bit of apple cider vinegar on them, and got some crackers. Between the salted tomatoes with olive oil, the black olives, the vinegar drenched avocado, and the artichoke hearts; that alone was a treat. But add to that the tuna scooped onto the crackers, and you have a scrumptious lunch treat!
